Vegeterian Black Beans Soup Recipe
Vegetarian black bean soup is a healthy, hearty, and easy to make meal that will
keep you warmed up all winter. Topping this soup with a spoonful of Greek yogurt,
a few slices of avocado, and fresh cilantro takes it over the spot. Keep it vegan
by omitting the yogurt, or make it heartier for meat-lovers by adding some sautéed
chorizo sausage to the mix.
Ingredients :
. 1tbsp olive oil
. 1/2 onion
. 2 cloves garlic
. 1 red bell pepper
. 1 can black beans
. 250ml vegetable broth
. 1/5cup coriander cilantro
. 1.5 tsp cumin
. 1/4tsp red pepper flakes
. 1tsp balsamic vinegar
. 1/2 avocado
METHOD :
. Get a pot and add one tsp of olive oil
. Finely dice up half an onion and mince the garlic. Throw both in the pot and let it
simmer on low heat.
. In the mean time cut the bell pepper into small pieces and add them to the pot.
. Rinse and drain the can of black beans.
. Squash a few of them with a fork or with your hands to giive a soup a creamy touch, then throw
them into the pot with a bit of love.
. Add 250ml of vegetable broth to the mix.
. Chop the cilantro and add it to the soup.
. Now pimp it up with the cumin, red pepper flake and balsamic vinegar
. Let the soup simmer for about 10 min.
. In the meantime prepare some avocado slices and heat uo the tortillas.
. Soups on! Garnish the bowl with a little extra cilantro, avocado and
you're ready to roll.
